Egg devil or simply Dimer Chop /Devil, this evening time snacks is one of the famous street foods of Kolkata – suburban and one of the most popular one. Due to easy availability of egg with fewer price it is available anywhere says in each corner of any street or Para. Especially for Bong people from 8 to 80, everyone like to have this with a cup of hot tea or coffee, yes this is my favourite too .It is a perfect classic snacks for holidays and any small party. Basically it is stuffed egg and then deep fried. Stuffing may vary. Here we use potatoes to stuff .You can use chicken Keema or soya chunk also to stuff.
· Hard boiled eggs- 6 no(cut into half)
· Boiled ,peeled and mashed potatoes(medium sized)- 8 no
· Finely chopped onion-1 big sized
· Finely chopped garlic -2 tbsp.
· Finely chopped ginger-1 tbsp.
· Chopped green chilies-2 nos.
· Turmeric powder 1/8tsp.
· Kashmiri red chili powder-1/8 tsp.
· Chopped coriander leaves-1 handful
· Homemade spice powder- 2tsp.
(Dry roast 2 tsp of cumin seeds,1 tbsp. of coriander seeds,1 dry red chili and 1 small bay leaf and make powder with mixer grinder.)
· Salt to taste
· Bread crumbs-for coating
· Oil for frying
For a liquid solution:
· Egg -1 no
· Flour- 2tbsp.
· Cornflour-2 tbsp.
· Salt-little bit
· In a bowl take mashed potatoes and add homemade spice powder, turmeric powder, Kashmiri powder and salt.
· Heat a Kadai with 2 tbsp. of mustard oil. Add chopped onion and sauté for one minute. Then add chopped garlic and ginger. Cook for 2–3 minutes and add potatoes mixture.
· Mix and cook for 5 – 10 minutes, the mixture will be dry and you will understand it watching from edge.
· Then add coriander and green chilies and mix.Canbe added little bit of salt to adjust the taste.
· Take half of boiled egg in your plam and have to stuff potatoes mixture to both sides of it. Have to prepare all half eggs like it. Egg devil stuffing is ready.
· In another small container have to prepare the liquid solution mixing the above
· Then dip the stuffed egg devil into liquid solution and roll it into breadcrumbs.
· Then deep fry it in medium hot oil till it become brown in colour. Great it is ready to serve.Can enjoy any time..
· By the way you can also store it as raw balls for 2-3 days in deep fridge ,of course putting it in an airtight container.
